Long to recover the simplicity of less complicated times, when devotion to duty, honor, hard work and God’s truths promised a harmonious and rewarding life? There are still some things that are yours to influence, though, things that you can do for yourself. Things like making your own mincemeat, and then making your Own mincemeat pies and tarts. Not necessari- ly in the old-fashioned way, just with old-fashioned taste. 1 do have Mrs. Beeton’s turn- of-the-century instructions, the kitchen ranger b y Eleanor Godley in case you have a serious ‘‘olde tyme’’§ attack, but there’s a happy medium in- cluded, too. The famous Bnitish cook went about it thus: ‘‘Stone ! Ib. of raisins and cut them across. Wash, dry and pick the grit out of 1% Ib. of cur- rants. Mince | Ib. of raw lean beef, and chop 1 Ib. of suet very fine. Shce 3 oz. of citron, 6 oz. of candied peel, grate | nutmeg.
