POTATO SKINS Preheat oven to 450° Serves 4-6 people mts: 4 baking potatoes Cooking oil 3 cups grated mild cheddar cheese 1 cup sour cream 3 stems green onions salt & pepper *Crumbled cooked bacon may be added over cheese if preferred. Scrub potatoes, dry them and prick with a fork. Place on oven rack for 1 hour. Cut green onions into small circles and mix with sour cream. Refrigerate. Grate cheddar cheese. When potatoes are done, slice lengthwise and scoop out potato with spoon leaving very little filling. Heat oil until very hot (I use an electric wok). (UPI) - The meat pie’s origins are shrouded = in history, lost in the days when Indian met Spaniard in the forests around the oldest set- tlement in the Louisiana Pur- chase. But James Lasyone is sure of at least two things. People were making and selling meat pies around Nat- chitoches when he took his first steps off the farm nearly half a century ago. And to- day he sells nearly 160,000 of the delicacies every year. “My family was sharecrop- pers,” said Lasyone, who started Lasyone's Meat Pie Kitchen with a one-cyed gas stove and a single iron pot. “We walked into town on Saturdays and there would be people with little carts, pushing them up and down YORE N Spicing up history the street. “I talk to people much older and as far back as they can remember they've had meat pies. But until I opened my kitchen here, people made them in their homes and sald them in their homes.” The Meat Pie Kitchen in the old downtown strip along the Cane River has become something of a landmark in recent years — a haven for busloads of tourists, as well as for travelers armed with ice chests for long-distance takcout orders. “Travel agencies call us from all over the United States,” he said. “We have buses booked year-round, sometimes a ycar in ad- vance. If they're traveling in this part of the country, they try to book at least one meal with us.” Lasyone serves more than meat pies -— his New Orleans-style red beans and rice are big sellers, too — but it is the speciality that keeps his place on the tourist map For $5.95, visitors can dine on a combination salad, dirty rice, the meat pic, a slice of Cane River cream pie and coffee or tea. The rice dish gets its name from . one ingredient, chopped chicken giblets. The meat pies, spiced beef and pork folded into a fried pastry, can be purchased for $1.30 in the restaurant and $1.10 to go. Serve immediately on plate with sour cream for dipping. This is my own recipe. After trying potato skins at several restaurants I wanted to make them for guests and I must say they are a big hit. I don't add the bacon bits as I'm a vegetarian and the skins are just as good without them!
