When the original Village Bistro Boys rolled out of this Edgemont Village gem last year and headed for the more lucrative hills of West Vancouver, their compact high energy diner could have fallen into far less capable hands. Tt could have been hijacked by misguided quick buck artists and turned into a slipshod short-order house of pancakes or worse. While the Bistro Boys fan club scam ered west in hot ursuit of Joc Verri, Shawn erger and their new restau- rant, the Sabatuccis set about shoring up the bistro they vacated. Tt was a tough act to fol- low. They inherited a good name and a good location. But they added to it that special passion for food and mily that elevates good Italian restaurants above most others. Immediately before taking on the Village Bistro they ran a business that manufactured hand-made pasta. The Village Bistro had been one of the Sabatuccis’ pasta customers prior to their taking over its management. And they brought that pasta expertise with them to the Village. For example, their tortelloni — special jumbo tortellini hand-stuffed with a peppery ground chick- en and served in a rich toma- to cream sauce topped with fresh basil leaves — was first class.
