Though many restaurants now offer vegetarian and meatless op- tions, few cater to vegetarian diners. Perhaps the growing shift to meals that are lighter and include less meat, inspired by New Age thinking and environmental con- cerns, will force restaurants to in- corporate more vegetarian philosophies of their own in their operations. The Woodlands food store in North Vancouver, for example, has an in-store restaurant that is Strictly vegetarian, the only cne |! know of on the North Shore. But the operation is more an ald, new-age cafeteria than a bona fide restaurant. And, of course, there is Capers. The restaurant opened about four years ago as a luncheon ad- junct to the highly successful Capers grocery store and it has grown and prospered ever since. A new expansion will add another 40 seats to the restaurant and bring the total up to around 70, which will be good news for all the restaurant's regulars and all those who arrive for breakfast Sunday morning.
