Maybe you'll be doing the same thing and trying to decide what you'll serve over the weekend. If so, this column will come too late to give you some ideas. You might hold them over to Labour Day. First, although Brian doesn't know it yet, I’m going to buy a small! waffle iron. He won’t be too upset when I make waffles with fresh strawberries and whipped cream for breakfast one morning. This recipe came with my Mother's elderly Sunbeam waffle iron, which I've had for the past 20 years. She bought it sometime around 1952. Despite the cloth cord, it still works like a hot damn. This recipe is a winner. Sunbeam Waffles (This makes three waffles about 10°" square) 3 cups all purpose flour 4 teaspoons baking powder 1 teaspoon salt 2 teaspoons sugar 7/5 cup melted butter 2 cups milk 4 egps, separated Beat egg whites until stiff. In a large bow! beat egg yolks with milk. Add the sifted dry ingre- dients and beat well. Add melted butter. Fold in beaten egg whites. Measure out mix in quantities sug- gested by the manufacturer of your iron. Surprise someone you love with either some REAL maple syrup or a handful of strawberries smothered in whipped cream. You might even get them to pay for the new waffle iron. Last time we went down to our hideaway, | tried Shirley's: Rye Whiskey Wieners 1 Ib. cocktail wieners or regular weiners cut into bite-sized pieces. 1: cup rye whiskey ¥2 cup catsup Y2 cup brown sugar Vash of Tabasco Mix together rye, catsup and brown sugar. Add weiners and simmer about 40 minutes. Serve hot with toothpicks. Can be frozen. Best prepared a day ahead. Just don’t eat them all before the guests arrive, It’s hard to remember what you’ve got stockpiled in a summer home, but I know there’s a frozen bag full of Rye Whiskey Weiners. wat Another popular item at the hideaway is any kind of re-stuffed baked potato. These are marvellous for breakfast. Choose sturdy, big baking spuds — half is great for each of us, but if ] make them for the kids they’!l probably eat two halves each. So, this recipe serves sid adults or two adults plus two young people. Van. 987-4477 1 tin corned beef 1 medium onion, chopped 3 large baked potatocs Lots of salt aud pepper Poached eggs Trim the fat from around the outside of the corned beef. Melt a tablespoon of the fat and discard the rest. Cook onions in a frypan using the reserved beef fat. Add the scooped-out potato and the crumbled corned beef. Stir, heat and season. Meanwhile, heat a frypan of water with a dash of vinegar. Poach eggs (4 or 6). To serve, mound corned beef mixture back in potato skins, spreading skins and leaving a hollow for the eggs. If you use only four halves of the potatoes, wrap the leftovers and freeze. They re-heat beautiful- ly with a dusting of grated ched- dar. As a go-along, split big, ripe tomatoes. Remove as many as you can of the seed capsules. Squirt the holes with bottled Italian or Rus- sian dressing. Sprinkle with Parmesan cheese and top with but- tered crumbs seasoned with mixed, dried Italian herbs. Top with more grated Parmesan. 1 hope you’ve had a wonderful tong weekend. Some employers made Monday another free day. Since I employ myself (to a degree) I declared Monday a_ holiday. Brian did too.
