Most traditional entrees can be tailored for vexetarian or vegan consumption, Substitutions can include tofu, tempeh, textur- ized vegetable protein (IVP), and other meat- + products. Totu is a favourite substitute because of its versauiny. it doesn’t have a favour of it’s own — it absorbs the flavours of other foods. TVP and soy prote:ns are other popular substitutes. They come prepared as “ground chuck” or “steak strips.” These products are usualiy flavoured with spices and sauces. Ground chuck can be used fike hamburger for Pasta sauces, casseroles, and meat loat. Seiran is a wonderful brand of steak style veggie protein that can be used in stir-fry and other recipes that need a flavourful meat-like product. Veactable stock is tasty in soups and stews. Potatoes and exg: also make hearty substi- tutions in some recipes. A large spice rack is essential in vegetarian cooking. Meat enhances dishes with a salty flavour, but the vegetarian cook must add strong flavours without meat. Some standard additions include salt, garlic, freshly ground black pepper, red pepper, celery salt, oregany, basil, and rosemary. Experimenration is often the name_of the game in vegetarian cooking. Combine spices with flavourful oils for use on vegetables and salads. Try adding cinnamon tc meat substi- tutes for an exotic flavour. Purchase spices such as cummin, mustard and fennel seed. Sprinkle them on variaus dishes and see how they taste. Suon you'll be adding them to many standard recipes.
