Beat the wintertime
blues with a fresh salad

SALADS ARE not just summer-
time fare, Use the following ‘tips
to create healthy autumn entree or
side-dish salads.

© Buy the freshest vevetables
available. If a required ingredient
is not fresh and appealing. use
your imagination and substitute.

© Salads should be bright and
colorful. Contrast colors of ingre-
dients — combine «v.oked
potatoes, cooked green beans, red
peppers and carrots.

e Blanch raw vegetables by
briefly submerging them in boiling
water and then plunging them into
ice cold water to set the calor.

© Don’t overcook vegetables.
Overcooked vegetables such as
beets or cabbage will lose
nutrients, color and texture

© Vary the textures of salad in-
eredients. Combine crunchy snow
peas, firm carrot slices, and soft
pasta.

@ Vary the shape of -alad in-
eredients. Combine spiky Belgian
endive, long slender carro: strips,
quartered beets and sheli-shaped
pasta.

* Cut vegetables into circles,
thin slices, triangles, wedges and
rosettes. Cut each vegetable
uniformly using a sharp knife for
a clean cut.

FIRST NIGHT, Vancouver's New
Year’s Eve celebration of the arts,
needs volunteers.

People are needed to perform
various duties that include tick-
eting, ushering, security, and of-
fice duties.

Volunteers will receive a First

Night T-shirt, button, and an in-
vitation to the Volunteer Wrap
Party.
- This year First Night is expan-
ding beyond its 30 downtown
Vancouver locations: the North
Shore will te included for the first

SUBMISSIONS ARE now being
sought for the 1991 B.C. Book
Prizes.

The deadline for entries is Dec.
t. Cash awards will be presented
to winners in six categories.

All books entered must be orig-
inally copyrighted in 1990. A $15
fee and three sarnple books are
required for each title entered.

Society needs help

THE ARTHRITIS Society, B.C.
and Yukon Division, has estab-
lished a proviuce-wide Arthritis
Telephone Information Service
(ATIS).

This service provides emotional
support, assistance to locate
community resources, and
assistance to access the health care
system. Phone aperators are
trained volunteers.

The Acthritis Society is current-
ly recruiting volunteers to @perate
the phone tines. Days and tinies
are flexibfe, depending on the
volunteer's availability. Training
and inservices are provided. Any-

an Italian dressing.

*Use very flavorful and
pungert dressings on mild
vegetables such as cucumber,
potatoes and zucchini, more subile
dressings on highly flavored
vegetables such as beets and
parsnips.

* Make sure vezetables are dry
before adding salad dressings or

the dressing will be diluted and
not adhere well to the ingredients.

* Add salad dressings to raw
ingredients just before serving so
that the vegetables glisten.

if marinating vegetables, add
the salad dressing two to three
hours before serving so that the
full flavor of the dressing blends
with the vegetables. Make sure
that each ingredient is coated with
dressing.
