year always gives me a lift.
Can spring be far behind?

As for New Year's dinner | flat-
ly refs: to cook another miserable
turkey and fortunately my family
agrees. Our menu has a decided air
of spring to it:

Roast jamb

New potatoes (isn’t it wonderful
that these are available all year?)
Fresh asparagus with Hollandaise
sauce — and, yes, I've priced it!
Harvard beets

Homemade refrigerator colts
(made ahead — New Year’s day
may not be my most shining mo-
ment)

I’ve printed some of these reci-
pes in the years gone by, but darn-
ed if 1 can remember just which
ones. At least these three parts of
the menu may be prepared a day
ahead.

Harvard Beets
1 14-02. tin diced beets
2 teaspoons sugar
2 teaspoons vinegar
2 teaspoons cornstarch

Drain the beet juice into a small
saucepan. Add sugar, vinegar and
cornstarch, Stir over low heat until
thickened. Add beets and heat. If
you like, season with a pinch of
cinnamon.

1 cup warm water
1 teaspoon sugar

Insert dough blade into pro-
cessor. Measure flour and salt into
the bow! and brizz to mix.

With processor running, slowly
begin to pour fiquid ingredients in-
to flour. This should take about
one minute. If dough seems a bit
sticky, add a little bit of Nour — a
teaspoonful at a time.

When dough leaves the sides of
the bowl, continue to process for
one more minute.

Place dough in a greased bowl,
turning over to grease the top.
