This small fish has witig-like fins that spread as it leaps through the water — thus giving the ap- pearance of a fish in flight. Flying fish can be served steam- ed or fried with a spicy coating of lime, herbs, onion and pepper. Breadfruit has been a Bajan staple for almost two centuries. A starchy fruit with a slightly fibrous flesh, breadfruit is used extensively because of its versatility. Unlike its name, breadfruit is served as a vegetable, either boiled, baked, fried or pickled and even in soups and salads. Okra, an unusual vegetable with dark green finger-shaped pods and soft pinkish seeds, is popular in soups and salads or served on its own, Okra is featured in cou cou, another national dish. food Making cou cau is a challenge for most Bajan cooks. It requires expert stirring of cornmeal and okra to a smooth consistency. Lumpy cou cou is considered a failure. For a hungry tate night crowd, there’s Baxter’s Road in the heart of Bridgetown. This street is the place for real Bajan-style food — sizzling hot salt fish cakes, fried fish and a bread called lead pipe. As the name implies, this bread is definitely not for anyone on a diet.
