ZUCCHINI PIE

2 cups cut up zucchini
salt

boiling water
Ys cup chopped onion

‘A cup chopped green
pepper

1 cup shredded cheese
I cup milk

‘A cup biscuit baking mix
3 eggs

‘A tsp salt

1/8 tsp pepper

% tsp garlic powder

% tsp sweet basil

% tsp oregano

Cook zucchini in boiling
water, just until soft - drain -

place in greased 9” pie plate-
sprinkle with onion-green

pepper, cheese & place
remaining ingredients in
blender container. Cover

and whirl 15 seconds, or |!
minute with electric beater -
pour into pie plate. Bake
375° oven for 20-25 minutes
or until top is golden brown -
let stand 5 minutes before
serving. Makes 4 servings.
Equally as good with
cauliflower.
