Equipment necessary 1 gal (4L.) fermenting jug & funnet Hydrometer & testing jar Air tock & adapter Cheese cloth Syphon tube & clamp Sterilizing (sujfite) solution - Household biender or food processor ingredients: 500 gms. truit — fresh or home-canned (15 oz ) 250 gms raisins (for red wine, OR sultanas (for white or rose wine) 1 Kg. white granulated sugar 1 tsp. pectic enzyme 1 pkg. wine yeast ‘Ye tsp. nutrient 1-2 tsp. acid blend (type & amount depend on fruit used — please ask us for the correct blend) 0-¥2 tsp grape tannin Method: 1. Dissolve sugar in 1% pints water by boiling. Allow to coo! 2. Liquify fruit & juice in blender. Pour into sterilized jug. 3. Liquify raisins or sultanas in blender (use a little water). 4 Pour sugar syrup into a Sterilized wine bottle untit half full and place to one side Pour the rest of the cooled syrup into jug with fruit. 5 Add 1 tsp pectic enzyme to jug with fruit Swirl to blend, Attach airlock and leave in a warm place tor the next 4 hours (or overnight) 6 Make a ‘yeast starter’ by adding “2 tsp Nutrient, required acid blend and tannin, plus 1 tsp of yeast to the wine bottle (half full of sugar syrup) Plug top of bottle with a clean piece of paper towel Swirl to blend Leave bottle in a warm place tor the next four hours (or overnight) 7 Atter 4 Nhours of so add yeast starter to the gallon jug and top up it necessary to two-thirds full only Attach au lock Allow to terment in a warm place for 45 days 6 Strain out the bulk of the sohds through a piece of cheesecloth into a clean gallon jug Top up this new gallon to 4 below the ai lock and let stand tor two to three weeks During this time top up with water until full this time Attach ar iock 4Y When wine is cledt and inactive syphon into Clean stenhzed wine bottles and Seal Vileid: Sik M50 mu bottles of ght dry table wine CHEERS!
