Restaurant owner Audrey Skalbania could take kudos for the four-course dinner, which was set upon crisp white linen table cloths, con- trasting nicely with the red, white and blue bouquets of flowers. Audrey’s chef James Bowen created an excellent menu higilighting pates, kippered salm- on salad again using white, red and blue edible flowers, a confit of quail, all topped off with a berry-laden meringue for dessert. James Bowen had the generous assistance of Ken Iaci of Joe Fortes, Ron Lamme, Umbertino’s executive chef, and Phillip Mar- chand of the Arbutus Club. Umbertino’s Settobello supplied the dinner for the 75 volunteers, who worked all day Friday in the stifling heat to pull the entire gala evening together.
