tradition continues.

Spring Cleaning

Last but not Jeast, spring
cleaning. According to an-
cient tradition, the three
days after Palm Sunday are
supposed to be devoted to a
thorough cleaning of the
house, the most vigorous of
the whole year, to prepare
for the festivities ahead.

ANCIENT RECIPES

Baba
I cup milk
3 cups flour
“cup luke warm
2 yeast cakes
% cup + 1 tbsp. sugar
2 tsp. salt
15 egg yolks
I tsp. vanilla
% tsp. almond flavouring
1 cup chopped almonds
1 cup chopped orange &
lemon peel
Y% cup melted butter
bread crumbs

Scald the milk. Slowly add
% cup flour to milk and
beat thoroughiy. Cool.
Dissolve veast in 4 milk
and a teaspoon of sugar and
add to cooled mixture. Beat
well, Let rise until double in
bulk. Add salt to eggs and
beat until thick and lemon
colored. Add sugar and con-
tinue to beat. Add to sponge
with flavouring and rernain-
ing flour. Knead for ten
minutes. Add butter and
continue kneading for ten
more minutes, or until the
dough leaves the fingers.
Add almonds and _ citron
peels and mix well. Let rise
until double in bulk. Punch
down and let rise again.
Punch down and put into
fluted tube pan (or regular
bread tin). Butter the pan,
press blanched almonds
around the sides and bot-
toms. Sprinkle with fine
bread crumbs. Fill with
dough to cover 4 of the pan
