ORANGE MUFFINS
E whole orange
Y eup orange juice
% asp cold butter/marg.
L eee
4 cap raisins
1% cpp all-purpose flour
% cup white sugar
1 tsp. baking soda
I tsp. baking powder
salt, to taste
% cup dates

t. Cat whole orange into 6
sections, chop medium fine
m the food processor.

2. Adid egg, orange juice, and
butter (cut mto 6 pieces).
Pulse until butter is size of
small peas.

3. Add all dry ingredients:
pulse bricfly.

4. Throw in dried fruit; pulse
briefly. Spoon into medium
muffin tin/cupcake holders
Bake at 350° 15-20 minutes
(Yield: 14 medium muffins.)

Variation: 1: ¢. flour My
c. all-purpose flour, + 4 ¢
bran, + “% whole wheat flour

Easy to freeze & thaw as
needed.
