WINE SPOTS

SINCE we actually started our $49.95
Wine Arts red Bordeaux home-winc-
making kit a month ago, we can slip
into fast-forward mode and reveal the
results.

Day | went smoothly, thanks to the aid
of a helpful and experienced neighbor who
warned me not to try to handle the 7 kg
plastic juice bag with hands still wet from
sterilizing equipment etc. (You wouldn't
want to mop this up.)

With the juice in the primary fermenter.
topped up with water to the 23-litre mark
and the yeast stirred in, we added the
- included elderberries tied in a clean nylon
‘ stocking. (These add a hint of tannic dryness

to the wine, but they are optional and can be
“left out if you want a fruitier finished prod-
uct).

Day 7: Removed elderberries and
siphoned wine into sterilized secondary fer-
menter (plastic carboy), added stocking
packet of oak chips, plugged the top with
fermentation lock bung. Couldn't resist a
sniff and sip: pronounced distinctive merlot
fruit already emerging.

Day 18: Fermentation essentially com-
plete: added clearing agent from packet #6,
stirred vigorously for three minutes six
times during the next 24 hours, Tasting
notes: wine noticeably clearing, fruitiness
smoothing out. Dangerously drinkable:
neighbor observes, “| know people who'd
be drinking this now.”

Day 28: Siphon-off cleared wine into
large jugs for possible re-boltling in a week.
Clean up equipment.

Results: Sprung on a barbecue crowd wwo
days after bottling to rave reviews! Several
guests observed that they'd paid $10 a bottle
for wines that weren't better than this. One
even offered to buy a gallon from me! (DO
NOT SELL HOMEMADE WINE. IT IS
HIGHLY ILLEGAL TO DO SO.)

Admittedly, the wine is no Chateau
Petrus, but it is a sound little picnic wine
that compares favorably with many of the
increasingly popular merlots in the lower
price range. The difference is that it cost
around $2 per litre (not including the one-
time equipment cost) and we now have a
hobby that occupies an hour or so cach
month.

We have named our wine Chez When
and it’s available only “chez nous.” Drop in
fora glass.
