Cailebaut supplies most of the chocolate From page &0 the Palace of Justice, are the chic shops of the Galerie Louise and other arcades extending cast along the busy Avenue de la Toison d'Or. Situated among them is a spacious shop occupied by Corne Toison d’Or, a family operated chain founded by Joseph Girardi-Corne in 1935. Corne Toison d’Or is one of the few retailers that still manufactures its own chocolate (Callebaut supplies its top quality chocolate to most Belgian companies). Corne Toison d’Or wraps its product around such fla- vortut centres as almond pra- line and nougatine butter cream. As the Avenue de la Toison WOr curves toward the north, passing govern- ment offices and constlates, it becomes the Avenue des Arts. A right turn at Place Miadou leads east to the Chaussee de Louvain, At No. 9A on this otherwise unex- ceptional street is the small sales outlet for Manon, another of the few Belgian companies to make and dip chocolates entirely by hand. Some Manon items require as many as 10 steps to com- plete. Most decadent of the company’s creations is a large birtersweet chocolate cup filled with creme fraiche and topped with milk chocolate enfoiding a Cognac butter- cream dotted with 24-karat gold. Many Belgian chocolates feature fillings made trom fresh dairy products that can spoil if they sit too long. Visitors probably won't be able to resist enjoying these chocolates on the spot. However, those who have the will power to keep some for the folks back home and who are returning home soon will be glad to know that the ereme fraiche fillings have a shelf life of about two weeks.
