The Chinese New Year of the Rat
scampers off your social calendar on
Monday, Feb. 19. Those born in
1900, 1912, 1924, 1936, 1948,

1960, 1972, 1984, 1996 are reputed-
ly remarkably easy to get along
with, channing, hard-working and
thrifty, This whole year will be one
of plenty, prosperity, and the accu-
mulation of wealth through prudent
investment.

While criss-crossing China for
three weeks a few years ago, |
gained a great appreciation at the
variety of individual dishes, each
defined by an innate sense of bal-
ance and resourcefulness, distin-
guished by fragrance, texture, color
and flavor and each representative of
its own region.

The classic cuisine of China was
born in the imperial Palace, where
thousands of people were employed
in the preparation of food and wine
to be savored by the royal family. It
was in the Han Dynasty (around 200
B.C.) that the blending of the five
essential flavors, bitter, sour, sweet,
