Chop pulp TOMATOES STUFFED WITH MUSHROOMS and set aside Sprinkle insides of tomato shells lightly with salt, pepper, and sugar Stand tomatocs upside down to drain for 30 minutes Saute grecn onions in butter unt softencd Add mus rooms and saute until golden. Stir in reserved tomato pulp, temon juice, sherry. papmka, and salt to taste Continue cooking for 2 minutes Turn heat to high and add cream Cook, stirring, until liquid ts reduced and cnekened = Place tomato shells in a buttcred shallow baking dish or 4 buttered ramckinas. Fill with mushroom mixture and top cach with Parmesan = and Geuyere. Bake for 10 minutes. Place under the broiler to brown.
