Here's a bread recipe that | really like. It makes one round loaf that is wonderful hot out of the oven. It keeps very well and slices neatly for sandwiches. CHEESE AND ONION BREAD These instructions are for a food processor. If you're making it by hand, mix the yeast and egg together as directed and add to the remaining ingredients in a large bowl. Use a big spoon to start and then your hands. Knead by hand about 10 minutes. 2 Tbsp. sugar, divided Ys cup warm water 1 package active dry yeast (1 scant tablespoon) legg 2% cups flour ; T tsp. salt 4 cup regular margarine, softened 1 cup cottage cheese 2 isp. dry dil weed 2 Tbsp. finely grated onion In a 2 cup measure with a spout, combine 1 Tbsp. sugar, yeast and water. Stir and let stand until frothy. Add the egg and beat with a fork or small whisk until well blended. ‘In bowl of food processor with dough blade at- tached, combine the remaining | Tbsp. sugar with all the rest of the ingredients. Buzz until well blended. With. the machine running, gradually pour the yeast mixture through the feed tube. When the dough puils away from the sides of the bowl, time the machine 1% minutes to knead. Remove dough to a_ greased bowl and roll it around to butter all surfaces. Cover with plastic wrap and place in a warm spot to rise until] doubled ~ about 1% hours (less time on a warm day). Form into a round loaf and place in a well-buttered souffle dish. Cover and let rise again until doubled — about % hour. Bake at 350°F, 35 minutes. Try to serve this hot out of the oven — it’s great with home-made soup. SPINACH SQUARE I served this as one of the ~ mean larbara McCreadie BUDGET BEATERS vegetables at Sunday dinner. It is enough for eight as part of a full meal, It cutis neatly and would be great as a hot appetizer. 1 — 10 oz. package frozen chop- ped spinach 1 large orion, finely chopped 4 eggs, beaten Ya cup grated Parmesan cheese 1 tsp. granulated garlic 1 tsp. mixed dried Italian herbs ¥2 cup margarine, melted 2 cups stale bread cubes — %2"* (I used the iteftover cheese/onion bread, previous recipe) Salt and pepper Thaw spinach in the microwave — 1 put it in for 15 minutes on defrost which partially cooks it. Drain and squeeze out as much water as you can. Mix everything together and turn into a sprayed square cake pan. Refrigerate several hours or overnight. Bake at 350°F, 20-25 minutes or until the centre is firm to touch. Let it sit for five minutes before cutting in squares. @e>. DAD’S COOKIES 1 cup softened margarine 3 cups brown sugar 2 eggs : ltsp. vanilla : 2 cups flour Ltsp, baking soda Y tsp. salt I cup faked coconut 2 cups quick oats Beat the margarine, sugar and eggs together until fluffy. Add vanilla. Mix flour, soda and salt together and add along with coco- nut and oats, Mix well. Drop by teaspoonsful onto lightly greased cookie sheet. Space them widely — they spread.
