3-4 pound piece of corned beef Wash corned beet, well in cold

Water to cover

2 tbsp. pickling spices

I small onion, cut in quarters
5 peppercorns

3 sprigs parsley

2 stalks celery, including leaves

GLAZING SAUCE

1 cup ketcnup

Libsp. dark brown sugar

Y% tbsp. celery seed

E tbsp. dry mustard

2 tbsp. Wercestershire sauce
2 ibsp. water

water. Place meat in large heavy
panand cover with water. Bring to
hoiland boilabout 3 minutes, Pour
off water and again cover with cold
water, Add remaining ingredients
and bring to bail, Lower heat
immediately and simmer 3 to 4
hours or until meat is tender, When
finished, remove from waterand set
aside.

Combine sauce ingredients. One-
half hour betore serving place pre-
pared corned beef ina shallow pan,
fat side up and pour the glaze over
meat. Bake in a preheated 350°
oven for 30 minutes.

Thinly slice meat and arrange on
a large platter overlapping slices,
