Barbara NicCreadie BUDGET BEATERS Nancy’s Wacky Cake Sift together into an ungreased T am be- | 8°’ square cake pan: 1% cups all-purpose flour ¥2 teaspoon salt 3 tablespoons Hershey's cocoa 1 teaspoon baking soda l cup sugar Make three holes in dry ingre- dients. In first hole put: 1 teaspoon vanilla In second hole put: 1 teaspoon vinegar In third hole put: § tablespoons salad oil Over the whole thing pour: l cup water Mix well. Bake at 350°, 25-30 minutes or until a toothpick in- serted in the center comes out clean. Let cool in pan on rack. Frost or sprinkle with powdered sugar. (My note: Powdered sugar sprinkled through a paper lace doily is very attractive.) Nancy’s Chocolate Frosiing 1-1 1b. box icing sugar Y% cup butter, melted 3 tablespoons cocoa 3 tablespoons sour cream Beat sugar and butter together until well mixed. Add cocoa and sour cream and beat until very creamy. Frost cake and refrigerate. eeo Nancy is a school administratcr and works long hours. She also loves to entertain. This chicken dish is ideal for anyone who is pressed for time: Lime-Cucumber-Dill Chicken 6 chicken breasts (haives) salt and pepper 1 green pepper, diced juice of one lime 1 teaspoon diti weed bottled Creamy Cucumber salad dressing Season chicken breasts with salt and pepper. Place in a sprayed 13°" x 9°? baking dish. Sprinkle lime juice and dill weed over chicken. Bake 30 minutes at 350°. Remove chicken from oven. Sprinkle with green pepper and coat generously with cucumber dressing. Bake an additional 15 minutes. Serve hot. Sauce may be served on the side or over rice. ees Nancy’s Festive Cranberry Salad specialties Keep this one in mind for Thanksgiving and Christmas — especially if you’re doing a pot luck. 2 regular packages strawberry jello 1 - 14 oz. tin crushed pineapple, drained and rinsed 1 - 16 oz, tis whole cranberry sauce 2 packages frozen strawberries (in syrup) 1 - 500 g carton sour cream 1 cup chopped pecans or walnuts Prepare jello as packages direct. Cool, and add pineapple, cranberry sauce, strawkerries in- cluding juice. Place half the mix- ture in each of two 8’’ square metal cake tins. Refrigerate the tins to set the jelly mixture quick- ly. Combine sour cream and nuts and spread over each set cake pan of jelly mixture. Top with remain- ing jelly and refrigerate until firm. Keep refrigerated until serving to 12. Nancy tells me that this docsn’t work in either one large rectangu- lar pan or in glass pans.
