6 baby Fennel bulbs

4-5 c. lightly salted water
1/4 c. olive oi!

5 oz. chicken stock
1/12 oz. grated Romano
cheese

Boil the salted water and
add the olive oi!. Blanch the
fennel bulbs in the water fora
couple of minutes. Remove,
immerse in cold water to stop
the cooking process. Select a
nice saucepan, arrange the
bulbs and add the chicken
stock to cover by one third.

Cover, simmer about 15
minutes. Uncover, sprinkle
with the Romano cheese.
