Barbara KicCreadie Here are a few of my favorites: Margarita Pie This makes a very large pie — feeds 10 — it’s very rich and you will probably want smaller slices. It's sinfully rich, but as it’s frozen, you can keep it for weeks. Who am ! fooling? Funny how it shrinks in storage. Crast: Trust me! nw garin 5 oz. package pretzels (1% cups) ¥2 cup sugar 1? ry -1 can (14 02.) sweetened condens- ed milk (ie. Eagie Brand) 1¥2 tablespoons fresh lime juice 134 tablespoons tequilla 1% tablespoons orange liqueur (Tripte Sec etc.) Green food coloring — added drop by drop 2¥2 cups whipping cream Melt Butter. Process the pretzels to fine crumbs. Combine with butter and sugar. Press into a well-sprayed deep 9°’ pie plate, building up a bit of a rira up past the edge. Beat the cream until it will peak. Set aside. Beat the condens- cup plus two tablespoons mar- ine BUDGET BEATERS ed milk with lime juice and li- quors. Add food coloring, drop by drop, until you have a pleasant green shade. Fork mixture gently into cream with a rubber spatula. Pour into prepared shell and freeze at least overnight. Well wrapped, it will keep several months in the freezer. Let stand half an hour at room temperature before cutting. Banana Blueberry Muffins cups flour 2 teaspoons baking powder Y2 teaspoon salt ¥2 teaspoon cinnamon 2 very ripe bananas 2 eggs ¥s cup packed brown sugar Y% cup plus two tablespoons mar- garine, melted 1 teaspoon vanilla 1 cup blueberries (fresh or frozen, unthawed) Y% cup white sugar 1 teaspoon finely grated lemon peel Measure the dry ingredients into a bowi and stir well. Whip the bananas, eggs, brown sugar, mar- garine and vanilla in blender until smooth. Stir into dry ingredients with blueberries. Stir only until mixed but lumpy. Spoon into 12 muffin cups. Rub sugar and femon peel together and sprinkle a pinch or two on top. Bake at 400°, about 20 minutes. Dinner Roils Don’t be afraid to double this, but at this size it’s easy to handle if you’re kneading by hand. Also, it will suit a medium-sized food processor. Here's the’ processor instructions. Pour i cup of warm water into a jug with a pouring spout. Stir in a spoonfui of the sugar, sprinkle yeast on top, stir and let sit until frothy. Whisk in the remaining sugar, melted butter and egg.. Measure the flour into bowl of processor (dough: blade). Start the machine aed pour the liquid very, very slowly into the machine. When all the liquid is in, time the machine exactly one minute to knead. Remove dough to a well-but- tered bowl, rotate to grease the top, cover and let rise until dou- ble. Either form rolls and let rise again or store in the fridge until needed. Form rolls and let rise until doubled. Bake at 400°, 15 minutes. You can make these to the fridge stage a couple of days ahead. Cold dough takes about 2 hours to rise. A dozen and a half hot rolls for dinner! Gerri’s Oyster Crackers This is a Hidden Valley Ranch recipe but I got it from Gerri. 1 bag oyster crackers or mini-Ritz 1 package Hidden Valley salad dressing mix 1 teaspoon garlic powder 1 tablespoon dry dill weed M% cup olive oil Combine crackers and dry in- gredients. Pour in oil. Store in a tightly sealed plastic dish. Shake every time you walk by. They’re ready the next day. Mariene’s Double Swiss Sandwiches % cup butter ¥2 cup chopped green onion 1 cep sliced mushrooms 1% cups diced ham % cup flour Salt and gepper 1 chicken bouliion cube 1 cup boiling water 1 cup light cream 6 slices buttered toast 6 slices (big) tomate Grated Swiss Melt butter and gently saute onion, mushrooms and ham until vegetables are limp. Stir in flour, salt and pepper. Dissolve boullion in boiling water. Stir in. Add cream and stir until mixture is thick. Cool. To serve, top each slice of toast with sliced Swiss and tomato. Spoon on sauce. Top with mere Swiss, grated. Bake at 350° F un- til bubbly. The Community Panel reviewing family and child services legislation in British Columbia has delivered two wide-ranging reports te your provincial govern- ment. Aboriginal panel members conducted a parallel con- sultative process, and demanded a return to their communities of the responsibility for protecting and nurturing their children. The Panel's 264 recommendations will provide the foundation for new legislation to ensure communities have the services and resources needed to help keep families together.
