OOL ATLANTIC airs have been replaced by warm Indian Ocean breezes at the West Vancouver Seafood and Grill. The restaurant’s multi-hued green walls have given way to shades of taupe and rose. And with that interior warmth _ has come anew and more inter- esting menu. The Grillreplaced Chesa ‘ Seafood and Grillin 1990 when Gary ard Diana Chalk, along with Gail Schmidt, bought the restau- rant they were managing. The trio’s management had brought a certain neighborly grace to the restaurant’s persona; the trio’s purchase of the Grill allowed them to bring their enlightened culinary philosophy to their clientele and to the good folk of West Vancouver. That approach is elementary but all too rare in the restaurant trade: prepare all your restaurant’s food on the premises with pure, fresh ingredients. The philosophy is seeded in the ‘Grill owners’ desire to maintain product quality from start to finish and nourished in their confidence in the skills of the Grill’s kitchen staff. Those skills are considerable. So at the Grill, you get Grill cooking, not Grill surroundings with some Grill cooking and some imported cooking. And Grill cooking is well worth sampling; there is something for each of the senses in a Gril/ meal. Chef Mark Scott wisely allows the flavors of the seafood to speak for themselves, adding his imagi- native culinary support where necessary. Entree prices are reasonable (39 to $15), and while the restaurant's wine list is comparatively pricey (bottles range from $20 up to $40), all the Grill’s wines are available by the glass — a most enlightened approach to wine marketing. Gary Chalk has advised that the restaurant’s wine will be changed soon, but the Grill will continue to provide its patrons with the option of sampling all offerings by the glass as part of its philosophy of tailoring what it serves to the needs of its clientele. On a recent Friday night, Table Hopping sampled a Pedroncelli Pinot Noir ($23), a well-made wine from California’s Sonoma Valley. We followed with a Warm Tiger Prawn Salad ($6.95) and Home- made Gravedlox ($6.25). Both were quality openers.
