* Frozen Raspberry Cheesecake

Almost everything can, and
should, be made the day before.
Pre-cook and chill the asparagus in
a mild vinaigrette dressing. Add
the avocado stices just before serv-
ing.

Seafood Pate
2 slices white bread,
crusts removed
¥2 cup whipping cream
1b. red salmon fillets
Yi Ib. crab meat
6 eggs
2 ice cubes
2 tablespoons fresh parsley,
chopped .
1 terspoon tarragon
salt and pepper
¥2 cup whipping cream

Soak the bread in the first 14
cup whipping. cream. Remove
bones from salmon and cut in
chunks.

Combine salmon, crab, three of
the eggs and the ice cubes in the
bowl of food processor and pro-

’ cess, until smooth, scraping down
the sides of the bowl from time to |
time. If. your machine is small, do.

.. Separate. the remaining three
eggs...Beat . whites until _ stiff.
Transfer the fish mixture to a bow!
and beat in the egg yolks; one at a
time, the bread soaked in cream,
the herbs and the seasonings. Fi-
nally, whip, in the _Temaining

Fold the Be ‘whites into the fish
mixture. ©...

Turn’ into, a buttered loaf pan
‘and cover tightly.

Set in'a pan of hot water and
bake at 375°F for one hour.
. Chill and serve with sauce.

Sour Cream-Dill Sauce
1 cup sour cream:
¥: cup real mayonnaise -
2 tablespoons chopped
: fresh parsley
A teaspoon powdered dil! (or
‘2 tablespoons fresh)
_ Beat together and refrigerate
for several hours.

fy. Fold in drained berries. Whip
cream and fold in. Pour into pie
shell and freeze. Serve garnished
with additional whipped cream.
