With emigration in the 19th and 20th cen- turies, their culinary treasures began to scale the wall and land on our shores. But it was the communist takeover in 1949 and the subsequent parade of fleeing chefs to Taiwan and Hong Kong —.with their most cherished recipes in tow —- that brought Chinese here. Today, some of the finest practi- tioners of the art of Chinese cooking are right here in our city. And lucki- ly, we will have the opportunity to savor the flavors of the Far East as Vancouver welcomes the Year of the Rat in festive events. The Canadian Airlines international Chinese New Year _ Festival at the Plaza of Nations will run from 11 a.m. to midnight, Friday and Saturday, Feb, 16 and 17 and until] am. on Sunday, Feb. 18. Tickets are $2 at the door for a taste of ethnic culture. Highlights of the festival will include Chinese opera, a traditional tea room, and of course, the tradi- tional Chinese Lion Dance, Plus, there will be a food fair and cooking ‘| demonstrations from some of the city’s most innovative chefs. ‘ "The Metropolitan Hotel will be . celebrating Chinese New Year in their own way, traditional and mod- em. Michael Noble’s Szechuan Chicken with Orange Dressing Marinade: 2 Tbsp. Szechuan peppercorns (crush in pepper mill) 2 Thsp. black peppercorns (crush in pepper mill) 4c. dry sherry 2 Thsp. light soy sauce 1 tsp. orange zest, chopped 1 green onion, minced 2 Tbsp. fresh ginger, minced 2 boneless chicken breast halves, skin on Combine all ingredients in a strong plastic bag. Add chicken breasts and marinate in refrigerator for 6 to 12 hours, Orange Dressing : 1 large orange 1 med, shallot, finely chopped 1 green onion, finely sliced 1% Thsp. sesame oil 4 tsp. rice vinegar X tsp. Sambai chili paste 1 heaping tsp. chopped cilantro Garnish: 2 c. baby salad preen Peel orange, section and remove white pith and membrane. Coarsely chop orange and add shallot, onion, oil, vinegar and chili paste. Season to taste and add cilantro. Set aside. Preheat oven to 375 degrees. To prepare chicken, remove from marinade, pat dry on paper towels. Season chicken with salt and pepper and saute in two tbsp. olive oil over medium heat until lightly browned on each side, Remove from pan and cook in oven eight to 10 minutes or until meat is lightly pink. Let rest for five minutes. To serve: Arrange the salad . greens on a plate and drizzle some of the juices from the dressing over the salad. Slice the chicken into thin slices across the breast. Arrange slices over greens and spoon dress- ing alongside or on top of chicken. Serves two as a main course and four as an appetizer.
