Roberto’s Curried Chicken 2 whole fryers 6 cups boiling water 1 tsp salt 3 onions 2 apples 6 stalks celery Ye cup clive oit % cup carry powder Ya tsp pepper Ya tsp ginger 'Y2 tsp Tabasco sauce’ 1 tbsp Worcestershire sauce Y% cup flour . 1 cup tinned cocoanut milk 2 cups heavy cream 3 egg yolks, well beaten really Ruben. ring your own meat Cook the fryers in boiling water until done. Strip meat from the bones and reserve. Add bones to the stock and simmer until reduced to four cups (approx.). Strain and discard bones. Dice the onions, apples and celery and saute in oil until limp. Add the. curry powder and cook, -stirring for five minutes. Add re- maining seasonings, flour and then stir in the stock, chicken and coconut milk. Refrigerate several hours or overnight. Just before serving, stir in cream and eggs and heat thoroughly, stirring constantly.
