Sweet and Sour Bean Salad
~ Dressing: -
¥% cup sugar -
Ys cup salad oil
7/4 cup vinegar
¥2 tsp salt
freshly cracked pepper & a

Ismail onion
1 green pepper
1-15 oz tin’ cut green beans

1-15 oz tin cut yellew beans

1-150 oz tin kidney beans
{drained and rinsed)
1-15 oz tin. gerbanzo beans
{opt.)
Combine the ingredients

for the dressing in a sauce- .

pan and heat, stirring, until
the sugar dissolves. Dice the
peprer and onion and com-
bine with the beans. Toss
with the cooled dressing and
refrigerate several. hours.
Drain before serving.

ty. This is his recipe for

-Chicken Curry.

Roberto’s Curried Chicken
2 whole fryers
6 cups boiling water
1 tsp salt
3 onions
2 apples
6 stalks celery
Ye cup clive oit
% cup carry powder
Ya tsp pepper
Ya tsp ginger
'Y2 tsp Tabasco sauce’
1 tbsp Worcestershire sauce
Y% cup flour .
1 cup tinned cocoanut milk
2 cups heavy cream
3 egg yolks, well beaten

Cook the fryers in boiling
water until done. Strip meat
from the bones and reserve.
Add bones to the stock and
simmer until reduced to four
cups (approx.). Strain and
discard bones.

Dice the onions, apples
and celery and saute in oil
until limp. Add the. curry
powder and cook, -stirring
for five minutes. Add re-
maining seasonings, flour
and then stir in the stock,
chicken and coconut milk.

Refrigerate several hours
or overnight. Just before
serving, stir in cream and
eggs and heat thoroughly,
stirring constantly.

Serve with rice and
assorted condiments —
chutney, pine nuts, coconut,
raisins, diced tomato and
cucumber and mustard
relish,
