End the
probiem

NOW AND again, we sit
down to pay the bills and
find out the news: We have
two choices — make the
payments or eat.

Since this is the end of the
month ['m sure I'm not alone.
However, if half the city is in the
same boat it doesn't make it any
easier to make ends meet in my
kitchen.

Our major problem is waste. I
just returned from a week in New
York and Washington. Opening
my fridge [ was greeted by a
number of old friends, all looking
unwell. One giant-size garbage bag
later I made a firm resolve to
eliminate the left-over problem.

Now that may sound simple but

. Since I’ve made the same resolve

since 1959 it's clear that a new set
of rules must be drawn up. How
about these?

e Never keep anything that
wasn't very popular on its first
presentation. And throw away the
recipe.

® Never keep left-over creamed
corn, peas or turnips. I’m sure
there are many other “no-keeps"’
that can be added to this fist, but
those happened to be among the
goodies J chucked this morning.

* Never keep any less than a
cupful of anything. Have you ever
tried cleaning a soup bowl with %
inch of dried-out gravy clinging
desperately to the bottom?

* Never keep anything that the
cat won't eat. And, should no one
else eat it within two days, dice it
and call, “Here puddy, puddy.”’

And so, with my new rules firm-
ly in mind, here's a recipe that uses
