- 500 g North Atlantic
' * smoked cod, thawed
25 mL butter
4 English muffins, split,
buttered and toasted
8 poached eggs
‘HolJandaise Sauce
Paprika

Cut fish into 8 equal por-
tions. Fry in melted butter,’
about 4 minutes each side or
until fish flakes easily. On
each muffin, layer a portion

’ of cod and a poached egg.

_ Spoon 35 mL Hollandaise
Sauce over each egg and
“sprinkle with paprika. Serve

yolks, lemon juice; salt and
pepper. Blend at low speed,
5 seconds. Remove cover
and blend at high speed,
gradually adding butter in a
steady stream.
