However, on occasion and because of carelessness, food contamination can occur. At home, the same precau- tions should be taken to pre- vent food contamination that could cause illness. When foods are not handl- ed properly, they can become contaminated with harmful bacteria. Given a certain en- vironment — such as food, moisture and heat -—- these bacteria can grow THE DANGEROUS ONES The bacteria prefers non- acid food such as milk, eggs, meat, poultry and fish — and will grow rapidly in these. An example might be chicken salad. Dry foods such as sugar or dry rice are not favorable to bacterial growth. To avoid contaminating food: a) Do not cough or sneeze over a food b) Cuts or any abrasion should be well bandaged. c) Do not use the stirring spoon to taste a food. d) Do not put cooked meat on the same surface as raw meat unless well scrubbed. These four simple rules are not hard to tollow Foods that should be well- chilled after cooking or preparing are custard, salad, chicken salad, salad, meat salad. Roast turkey, chicken, etc., should be put in the refrigerator as soon as possi- ble after serving. Stuffing should be put into a chicken egg fish or turkey just before roasting. The stuffing then should be removed and refrigerated separately. RE-FREEZING A NO-NO Don’t re-freeze raw meat, chicken, or fish.
