having to make a cake calling for
“a pound of sugar, a pound of
flour .....'" and then being called
upon to “beat with a wooden
spoon until fluffy.”
Cooks in. those days must have
had forearms like wrist-wrestlers.
Flour ‘had to be sifted three
times. Pans were ‘greased’? — but
everything stuck to them anyway.
A master’s degree in engineering
was necessary to coax the stove to
that temperature between ice cold

and “burnt offering’’.
And yet, cooks then seemed to

bake a lot more than we do.

Here are a couple of old cake
recipes, updated for modern kitch-
ens. .

Crumb Cake
2 cups ail purpose flour
¥% cup margarine
i cup sugar

1 ege - . . te

1 cup buttermilk ie ES -
V2 teaspoon baking soda : Seat .
2 teaspoons baking powder

1 teaspoon cloves

1 teaspoon cinnamon
Y2 teaspoon salt

1 cup raisins

1 cup currants

Using an. electric mixer, beat
flour, margarine and sugar
together until it forms fine crumbs.
