It was great fun and took us to Gastown, Lonsdale Quay, any number of florist shops and almost all the major department stores. Our three lunches on the town cost be- tween $10 and $17. I refuse to think about the hole that made in our ‘“‘savings.’’ but I suspect we’d have been better ofi ordering by phone to the most expensive shop in town and having the baubles delivered by limo. But it wouldn’t have been half the fun and, as one booth operator at the Quay remarked, ‘‘Isn’t it wonderful to have a daughter who takes an interest?” It is. J ad Christmas shopping can be ex- pensive in more than obvious ways. After a full day of prowling through crowded malls it’s so easy to say, ‘“‘Let’s noi bother eoing home. Why not grab a bitc to eat downtown?"’ Such temptation. One way around it is to place your dinner in the oven or crock pot before you leave. Opening your front door to the aroma of dinner ready does wonders for your morale, even if your feet hurt and you’ve got 2 collection of stuff that you know is the wrong size, wrong color or needs an engineer- ing degree to assemble. Here are a couple of casserole recipes that might do the trick: Venezuelan Rive 1 th. grcund beef i large onion, diced 1 green pepper, diced 1 28-oz. tin tomatoes, chopped I tin consomme Y eup sherry or apple juice 2 teaspoons chili powder salt and pepper 1 cup raw, regular while rice 1 cup sliced ripe olives I cup grated cheddar cheese. Saute meat with onion and pep- per until pink is gone. Add tomatoes, consomime, sherry and seasonings and bring to a boil. Add rice and return go a boil. Stir in olives. Turn into a large, greased cusse- role dish. Set oven timer so that the mixture will begin to cook about ah dur botere veup aitnad homy. set temperature to 324° EF, When vou get bome, sprinkle cheese on and cook until cheese melts. (if vou're home to wateh this, it normally bakes hour at 375°F and 15 minutes more after you add the cheese. The lower temperature gives you more leeway if the traffic is bad!) Serves six generously. tor Five-Tin Casserole This recipe is probably 30 years old — from the time when exotic ingredients such as chow mein noodles, cashews and even mushrooms were available mostly in tins. Don’t hesitate to substitute fresh ingredients, but it’s much faster te use the finned. 17-04. tin chicken of chunk tuna (rinsed) 1 tin mushroom soup 1 tin chow mein noodles I tin ed or button mushrooms 1 tin cashews 1 cup diced celery M4 cup diced onion pepper Combine all ingredients and place in a greased,one quart casse- role. Cover and bake at 300°F about an hour or until bubbly. (Here again, the temperature is lower and the time longer to allow for timed baking).
