Another is an easy — no knead — bread recipe that the same kid devoured in slabs, hot out of the oven, drenched in real butter. It’s addictive. The cake recipe is one of the first ones I ever baked. As for the brownies, this is the quickest recipe in town. You can toss it together in five minutes and knock the socks off uncxpected guests. Dust the top with powdered sugar, filtered through a paper doiley or cool the brownies and top with a thin layer of choc- olate icing (about % tin if you don’t feel like making your own). Mrs. Shore’s Poppy Seed Cookies ¥% cup sugar 22 cups flour 2% teaspoons baking powder ft teaspoon salt Ys cup poppy seeds \% Ib. butter (44 cup) softened 2 tablespoons sour cream 2 eges, lightly beaten 1 teaspoon vanilla Combine ail the dry ingredients and the poppy seeds. Rub in the butter. Combine the sour cream, eges and vanilla and add. If the mixture is too stiff, add another tablespoon sour cream. Chill. Roll out %"" and cut in circles. Pake (middle shelf of oven) about 10 minutes at 375°F — the bot- toms should be golden but the tops pale like shortbread. Oatmeal Bread This makes two leaves. It doesn’t keep well so use it hot out of the oven and freeze leftovers. 1% cups boiling water 1 cup regular rolled oats Ys cup Crisco v2 cup molasses { tablespoon salt 2 packages yeast (2 scant table- spoons) v2 cup lukewarm water 2 epgs 54% cups flour In a large bowi, combine water, oats, Crisco, molasses and salt. Dissolve the yeast in lukewarm water until it foams (about 10 minutes). Add to first mixture. Beat in eggs. Stir in flour. Cover and let stand about 20 minutes — it makes it easier to handle. Butter two large loaf tins. Divide the dough in half and shape into two loaves. Let it rise in the tins (keep it warm and covered) until doubled — about 1% hours. Bake at 350°F, ! hour. Barbara NMcCreadie BUDGET BEATERS V2 cup butter, softened I cup sugar 1 teaspoon vanilla ¥ cup miik 1% cups CAKE flour, sifted be- fore measuring 2 teaspoons baking powder V2 teaspoon salt 2 squares unsweetened chocolate, shaved (use potato peeler) 3 egg whites, stiffly beaten with 4 cup more sugar Whip the butter, sugar, and vanilla together until fluffy (you shouidn’t be able to feel sugar grains when you rub a bit). Sift the flour with the baking powder and salt. Add to butter mixture alternate- ly with milk, beginning and end- ing with flour. Beat well after each addition. Stir in shaved chocolate. Gently fold in egg whites. Bake at 350°F, 45 minutes. For two layers, 35 minutes. Top with a simple butter icing but use Crisco instead of butter to keep ic snow white. Dcibble a bit of melted sweet chocolate on top and swirl for a marble effect. Stove-Top Brownies Use the saucepan that you’d use to cook six potatoes! J don’t un- derstand ‘‘quart capacity’’ any better than you do! Ys cup margarine (that’s 2% of a square) 2 squares unsweetened chocolate (2 ounces) Ys teaspoon salt I cup sugar 2 eges 1 teaspoon vanilla ¥2 cup chopped nuts ¥2 cup flour On very jow heat, in saucepan, melt the margarine and chocolate. Add salt and sugar. Beat in the eggs, one at a time and then vanilla. Add nuts, then flour. Turn into a buttered 8°’ square pan. Bake at 325°F, 30 minutes.
