Good, inexpensive dishes that lend themselves to cold ‘‘winter’’ nights. Lori’s Cheese Fondue All my girls are remarkable cooks. Each has certain dishes that she treasures and this one is a fam- ily favorite. Kirsch is a traditional flavoring but it’s hideously expensive. Lori’s sister recently made this for a party and complained that she didn’t have nearly encugh. Don’t expect to feed any more than four with these quantities. 2 cups dry, white wine 1 clove gsrilic, speared with a toothpick Y% Ib. each gruyere and Emmen- thal cheese flour 1 loaf French bread, cut in one- inch cubes nutmeg, white pepper 3 tbsp. kirsch or dry brandy In chafing dish, on stove, over moderate heat, heat wine with garlic until steam rises. Meanwhile, cut cheese in 42-inch cubes and toss in a bag with flour. Remove cheese and discard any flour that doesn’t adhere to the cheese. Add cheese gradually to hot wine, stirring constantly. Just before serving, stir in kirsch and seasonings. Keep hot over chafing dish burner and insist that your guests stir the pot as they dip their bread cubes. You may remove the garlic clove if you like, but the toothpick ensures that no one will pick it up by mistake. We like this with a robust green salad (add hard cooked eggs and tuna fish to spinach, romaine and red lettuce) and plenty of fruit. eee My definition of soul food is shared food. Like the fondue, a big bowl of steamed mussels or clams makes a treat to share in front of an open fire. This is my youngest daughter Janine’s favorite. We are bread dippers, unashamed to sop up tas- ty broth with fresh, crusty bread — and this is ideal. Provide another big bowl to catch the discarded shells.
