Page’s new Tusk menu fea- tures, among other items, a quartet of East Indian dishes (North Indian Chicken, Lamb and Lenul curries and Butter Chicken — all $11.95) that brings the rich flavours of the Asian subcontinent west af Tavlor Way. And it’s more than a token stab ar Indian exotica. Page's kitchen turns out a good rendition of what is a complex cookery. A sampled Butter Chicken, for example, arrived aboard a large silver tray accompanied with a small buffet of Indian accoutrements: bowls of pureed [entils and vogurt: a generous mound of light Basmati rice beneath a crisp A-frame papadum,; a whole wheat Indian fat bread chap- adi. Grilled chopped chicken breast and chick potato quar- ters were prepared in a rich tomato butter sauce made slightly spicy with curry and hot peppers. For SEL95 it made for a delicious bargain. More traditional North American fare is executed with similar finesse. You'll get. a good stab of salmon that’s been marinated in olive oil, whire wine, herbs and garlic laid between thick focaccia bread and topped with a herbed mayonnaise. Add slices of fresh tomato, some lettuce leaves or any other topping you can think of and you've got a good light, informal meal.
