C8 - Wednesday, October 26, 1983 - North Shore News CHRISTMAS TREATS OR GIFTS Addicting rum ball delights A GOOD THING for me that the sum total of Christmas baking is not entirely vested in the seasonal cakes. | can still share in the special preparations for the holiday by making shortbread and other treats that can fill a dual role: as well as being of- fered to guests, they can be attractively packaged and given as gifts. Shortbread is best made now and stored to mellow; so are these ‘“‘Christmas Rum Balls’’ of Diane Clements’. They must have at least two weeks of ripening, she says, and you’ll have to find some secret place for them during this period---l'd suggest your safety-deposit box or some equally inviolable storage- place. They’re addictive. She says they'll keep four weeks in the refrigerator, but 8 cups of vanilla wafers, crushed, (2 boxes) 3 cups of icing sugar (750mL) Dash of salt 1'4 cups of melted butter (375mL) *%; cup of cocoa (150mL) 1% cups of white rum (375mL) 2 cups of pecans, chopped (500mL) Chocolate shot, or spray CALL 734-WINE the kitchen ranger by Eleanor Godley Combine the melted chocolate, sour cream, al- mond paste and salt, cream well and set aside. In another bowl, combine the wafer crumbs with the re- maining ingredients, except for the chocolate shot. Mix the two bowds together and stir and knead until it is thoroughly blended. Refrigerate to make it possi- ble to handle. REIl spoonfulls of the mix- ture in the palm of your hand, then in the chocolate sprinkles, and lay the balls on waxed paper and let them firm up overnight in the refrigerator. Then they can be stored, or frozen, preferably under lock and key. They don’t really freeze hard, but bringing them out early allows the rum to assert itself, too.
