Few of us were fond of liver
during our childhood. And who
remembers an enjoyable dinner of
kidney stew? Most of us remember
‘lingering at the table, or sacrificing
dessert, rather than eat liver.

__ Despite these unpleasant memo-
ries, some_of us acquired the taste
and indeed became devotees of
what the French refer to as “vian-
des varies” (The French language

has a way of making any food
sound desirable and appealing).

The following cooking tech-
niques are important when prepar-
ing liver for any dish: do not over-
cook -— rare to medium rare is
best; season with salt and pepper
before dusting with flour; cut liver
into strips similar so that more sur-
face is exposed and cooking can
occur very quickly; remove the
meat to a plate and let rest in warm
oven while making a quick pan
sauce.

For an elegant light meal, serve
this pate with soup, a loaf of hearty
bread and dessert. This is a also a
good appetizer to take to a party.

1% c. butter

1 ec. slived onions

1 Breen appie, peeled, cored and
sliced |

1 Ib. duck livers or chicken livers,

‘rinsed, dried and cut in half

4c. applejack or sherry
% ce. whipping cream
1X tsp. salt -
1 tsp. lemon juice
- Melt 4% cup butter in a skillet.
