Always on the lookout for dif- ferent ways to use it up, I stumbled upon this recipe in an old pam- phiet from the Alberta Potato Commission. I've adapted it con- siderably and it makes an excellent brunch dish. | beaters by Barbara Potato Hamcakes 4 medium potatoes, peeled 1 medium onion lcup cooked ham, cubed lege ¥2 cup flour 1 teaspoon baking powder salt and pepper milk oil for frying 6 poached eggs Run the potato, onion and ham through the food processor or meat grinder. Combine with the egg, lightly beaten, flour, baking powder and seasonings. Add milk to make a batter about the con- sistency of pancakes - the original recipe called for one cup but I found this a bit much. Divide batter in six portions and fry until golden brown on both sides. Spicy Franks 3 Ibs. franks (or any type of similar-sized European sausage) 3 cups tomato juice Y% cup brown sugar Y% cup prepared mustard 7/4, cup vinegar Y2 cup catchup 2 cloves garlic 1 medium onion 2 tablespoons Worchestershire sauce salt and pepper Cut the franks into 1°’ lengths - and skewer with a toothpick. Bake. at 350° until browned and most of the fat is rendered out. Drain on paper towels. Combine the remaining ingre- dients in your food processor and buzz until finely minced and well mixed. If you don’t have a machine, grate the onion and garlic before combing with the re- maining ingredients. Cook gently 20 minutes. Refrigerate. When ready to serve, heat the sauce and add the franks.
