the recipe was reproduced.
The translation from my
typewritten pages to what
comes to your front door is a
dicey business, on occasion -
some of you called when the
potato-skins recipe got a
pleat in the middle; some of
you reahzed that “tpns.”

served in Bellingham. This
is, in fact, my third attempt
to provide him with the
perfect recipe.

In your trusty “Mouli”,
grate two baby carrots and a
quarter of a medium onion.
Simmer these together in 3
Tbspas. (45mL) of margarine
for 10 minutes. Add 4 cups
(IL) of chicken stock, from
cans, cubes or bones, as well
as ‘4 tspn. (2.5mL) each of
dry mustard and paprika.

Cook it all gently for 15
minutes, during which time
you will put 2 Tbospns.
(30mL) of cornstarch into a
cup with “% cup (60mL) of

cold milk, stirring until
smooth. Also during this
time, grate 1 cup (250mL) of
strong Cheddar cheese. and
open a bottle of beer. You
need 1 cup (250mL) of beer
for the soup, and as the only
bottle 1 had in the house
contained 341mL that left
me exactly 9ImL to drink.
Perhaps you should open
two bottles?

Sur the starch mixture
into the simmering soup and
continue to stir for a few

minutes while it) thickens,
then the cheese. then the
beer, until it's nicely

blended. Now see what you
