We were taught in school that Henry VIII died from a combina- tion of gluttony and an unmen- tionable (then) sociai disease. The current theory is that although Henry was probably a glutton and immeral to boot, his death was due to malnutrition. It makes sense when you read the menn of a typical royal dinner of that time. The rich feasted on meat. In fact, vegetables were considered ‘‘poor man’s food" and viewed with contempt by those who could afford lots of meat. i’m no vegetarian — just like any other lifestyle, vegetarianism can be taken to extremes. Malnutrition is quite possible unless the vegetarian is well- schooled in adding protein from sources other than meat. However, with our stores overflowing with seasonal pro- duce, this is the best time of year to eat more veggies. This salad is unusual and deliciously addictive. It is popular in Greece and Lebanon and at the McCreadie house. Tabouli The parsley for this salad must be perfectly fresh. Discard any bruised, wilted or yellowed sprigs. i large bunch fresh parsley (about 4 cups chopped) 2 tomatoes 1 bunch green onions A cup olive oil 3 tablespoons Jemor juice 1 cup bulghur or cracked wheat @ook in the bulk food depast- ment) Finely chop the parsley, tomatoes and onion by hand. A food processor will turn them to mush. Whisk the oi! with the lemon juice. Rinse the bulghur in cold water and then soak it in cold water to cover for about an hour or until it plumps up. It supplies a fot of high-quality vegetable protein and is quick and easy to prepare. Mixed Bean Salad 1 - 14 oz. tin red kidney beans, rinsed 1 - 14 oz. tin garbanzo beans, rins- ed 1 - 14 oz. tin baby lima beans, drained 1 - 14 oz. tia yellow wax beans, drained 1 - 14 oz. tin cul green beans, drained 1 cup frozen kernel corn, bianch- ed in boiling water 1 large onion, chopped 1 each - red, green and yellow pepper, chopped %/5 cup salad oil VY. cup vinegar Ys cup sugar Toss the vegetables together in a large refrigerator container. Com- bine oil, vinegar and sugar in a small saucepan and bring to a boil. Cool and toss with vegetables. Cut sausages in 4" slices. Note: You may preter the hot variety of sausage but it can over- power the rest of the ingredients. Saute the peppers and sausage gently in the butter until done. Add garlic and stir over fow heat for a minute or so. Add remaining ingredients and toss well.
