Avocados are ripe when the
blossom end yields to gentle
pressure. Normally, the ones you
buy aren’t ripe. Try placing them
in a brown paper bag on your
kitchen counter for a couple of
days.

To prepare this appetizer salad
in advance, rub the cut surfaces of
the avocado with lemon juice.

You can cut down on the
amount of shrimp if you’re semi-
broke by substituting part imita-
tion crab or even some finely dic-
ed celery.

Shrimp in
Avocado Boats
3 ripe avocados
lemon juice
1 Ib. cooked, peeled shrimp
¥% cup real mayonnaise
4 teaspoon curry powder
6 cherry tomatoes, halved
6 pitted ripe olives
parsley

Split avocados and remove pit.
Spread with lemon juice. Combine
mayo with curry powder and a
dash of lemon. Stir in shrimp and
