breakfast, Danish style, try
Kryddere, a light cardamon-

spiced roll to be split and-

toasted before topping with
butter and several slices of
naturally good cheese. The
milder Danish cheeses are
best for morning such as
Tybo, Creamy Havarti, Dan-
bo (with or without caraway
seeds), or for the true en-
thusiast, try the stronger
Danish cheeses such as
Esrom and Danish Blue
Cheese. Natural berry
preserves also combine well
with the rolls.
KRYDDERE

‘(cardamon spiced rolls)
3 cups all purpose flour
1 tbsp. sugar
2 tsp. ground cardamon
l tsp. salt
1 cup milk
3 tbsp. bulter
2 pkgs. active dry yeast
1 egg, beaten

Combine flour,
damon and salt. Scald milk,
add butter’ and cool to
lukewarm. Dissolve yeast in
cooled milk, then add to
flour mixture along with the
beaten egg. Mix well, first
with a spoon, then with
hands, to make a sof, dough

Knead lightly until smooth
and shiny. Cover and let rise
until doubled, about 45
minutes. Roll out to “%-inch
thickness on a lightly floured
board. Cut with a 3 inch
biscuit cutter to make about 9
rolls. Place on a greased bak-
ing sheet. Let rise 20 minutes.
Bake in a 400?F oven 15 to 20
minutes. To serve, split each
roll in half and toast in oven
or toaster. Serve buttered
with a variety of cheese and
preserves.

Makes 9 rolls/18 halves.

NATURAL BERRY
PRESERVES
3 pkgs. (12 ounces each)
frozen raspberries (or
other berries)
2 cups sugar

Combine de frosted
taspberries and sugar in a
large suacepan. Let stand two
hours. Slowly bring to a boil
over medium heat; let simmer
a few minutes. Strain. off
whole bernes and place in a

storage container. Continue
to bowl jyutce over medium
heat, stirmmg occasionally,
until stightly thickened,
about 20 to 30 minutes) Pour
over berries Cover and

refrigerate
