2 lemons

Method:

Boil fruit whole until

tender. Throw away water.

Remove fruit to a large
platter. Let cook until it can
be handled. Cut grapefruit,
oranges and lemons into
halves. Remove all pips and
membrane. Put rinds
through mincer.

‘Add 1.cup of water and 5
Ibs. of sugar. Boil until it
gells.

Crepes can best be
described as very thin
pancakes. They can be

refrigerated, frozen, served
hot or cold, and are simply
delicious wrapped around an
apple / cinannon filling.
This is the season for
apples, and it’s always the
season for crepes.
SPICED APPLE CREPES
6 medium apples, finely
choppe
‘4 cup (125mL) lemon juice
4 eggs
1 cup (250mL) brown sugar
I tsp. (SmL) cinnamon
10 crepes (see recipe below)
Combine apples = and
lemon juice. Set aside.
In a large saucepan, beat
eggs thoroughly. Stir in

brown sugar and cinnamon.
Add apples and cook over
medium heat until apples ae
soft and mixture thickens.
Place a spoonful of filling
down the centre of each
crepe. Roll crepes and place
seam side down in baking
dish. Bake at 350°F (180°C)
10 to 15 minutes or until
thoroughly heated.

Makes enough to fill 10
crepes.

2 cups (500mL) flour
% tsp. (1mL) salt

3 tbsp. (45mL) butter

heavy cream.

To make crepes, heat a 6-
or 7-inch (15-17cm) ailed
pan. Use a % cup (65mL)
measure for dipping up
batter. Tilt the pan so the
batter is spread evenly.

Turn: to brown both sides.
Stack-on a plate until: ready
to fill.
