On Feb. 11 the obliging crew of the good ship Sea Mates celebrated irs Jith anniversary, an achieve- ment that becomes all the more staggering when you consider that in terms of stress and strain upon the system, one year in the life of a restaurant is worth eight years in the life of a human being. The key to its longevity is the affable Peter Chiu. LOVES WORK Sea Mates’ owner, manager and one-time chef since the Marine Drive location’s launching in 1975, Chiu mixes the nonchalance of a lightly seasoned restaurant veteran with the enthusiasm of a man in love with his work. Chiu slipped into the driver’s seat of 998 Marine Drive after manning the ovens of Van- couver’s now-deceased Wharf res- taurant, where he was the original chef. , Sea Mates was installed in digs formerly occupied by such forget- table eateries as the Frying Dut- chman and the Deimar Cafe. The latter restaurant was a hangout for mischievous chaps and ‘gals, where, on a normal Friday night, patrons’ could expect to sandwich orders of burgers be- tween punches in the nose. . HOUND GHOSTS But Chiu managed to hound the ghosts of deep-fry and amateur boxing from the building. ; He expanded its diner propor- tions to the present 85 seats, and he developed a flare for seafood cookery that has neither diminish- ed over the years nor taken itself too seriously with opulent menu -prices. Sea Mates atmosphere is one of a seafood bistro beached on the shores of Hong Kong. For the legion of Sea Mates fans, the restaurant's menu is in- delibly imprinted in the seafood sector of their palates; for those whose appetites have never been to sea — Sea Mates style — selection is almost entirely given over to undersea edibles. CULINARY VOYAGE On a recent mid-week voyage through the restaurant's culinary waters with the sure-handed Cap- tain Chiu at the wheel, my wife, the wee man and | tested a cross- section of recommended specials from the nightly Sea Mates’ blackboard offerings. First up was a raft-load of cultured muscles ($4.95) from the civilized shores of Boston. Baby Lobster Tails and Sirloin Steak ($11.95) and Tiger Prawns and Baby Lobster Tails ($10.95), both from the blackboard selection and both mammoth plateloads, again avoided the dreaded seafood doldrums of heavy sauces and heavy-handed garlic and butter ac- companiment. Chiu’s culinary philosophy tends to minimalism: let the seafood do the talking. On the regular Sea Mates’ menu, the two dozen seafood entrevs range in $9.95 to $13.95 financial depths.
