sold in the month of
February than in any
other month of the
year.

The chocolate people buy
for Valentine’s Day includes
milk chocolate, semi-sweet
chocolate, truffles, filled
shells of all shapes and sizes.
(The heart shapes being the
most popular of course.)

Volumes have been writ-
ten on chocolate.

Passionate words have
described its aroma, taste,
and aphrodisiac effect.

For over 3,000 years
Europeans served cocoa as a
rich and elegant “West India
drink” as it was called then.

_ It was Cortez who
brought back some cocoa
beans from his adventure in
the Empire of the Aztecs.

The Aztecs called the
beans “caucauatl” which the
Spanish modernized to
cacao, and later to cocoa.

The word chocolate also
has Aztec ori ins — “choco-
latl” means “bitter water.”

These two recipes cali for
bittersweet and semi-sweet
chocolate.

Very popular in Europe,
the dark chocolates contain
no milk and very little sugar.

For example, bitter
chocolate is over 50% cocoa
butter and no sugar.

TRUFFLES may not be heart-shaped, but few can resist the tempting treat of chocolate on Valentine's Day. Chef Pokomandy’s chocolate
truffle recipe calls for sugar-free bittersweet chocolate. Not surprisingly, February sales of chocolate top ali other months.

Canadians prefer to eat milk
chocolate — it contains 12%
whole milk, and 10% cocoa
butter.

Over-heating this delicate
substance will release and
separate the cocoa butter
and the mass will become
hard and grainy.

Chocolate Mousse

4 oz. semi-sweet chacolate
2 Tbsp. water

2 eggs, separated (room
temperature)

pinch salt

% c. granulated sugar
% c. whipping cream (33%)

In a heavy saucepan on
low heat, melt the broken
chocolate pieces with water,
stirring constantly.

Beat the egg yolks until
thick.

Stirring quickly, add the
yolks to the chocolate; then
remove the mixture remove
from the heat.

Beat the egg whites with
sait, gradually adding sugar
and beating until stiff peaks
form.
