Volumes have been writ- ten on chocolate. Passionate words have described its aroma, taste, and aphrodisiac effect. For over 3,000 years Europeans served cocoa as a rich and elegant “West India drink” as it was called then. _ It was Cortez who brought back some cocoa beans from his adventure in the Empire of the Aztecs. The Aztecs called the beans “caucauatl” which the Spanish modernized to cacao, and later to cocoa. The word chocolate also has Aztec ori ins — “choco- latl” means “bitter water.” These two recipes cali for bittersweet and semi-sweet chocolate. Very popular in Europe, the dark chocolates contain no milk and very little sugar. For example, bitter chocolate is over 50% cocoa butter and no sugar.
