He is unswerving in his goal that Peppi's on Dundarave Beach lives up to the vision that he has for: it as "Vancouver's Most Exciting Restaurant". He pledged also to honor every chapter of this building's remarkable history ... and to create a new chapter of his own. When he took charge two years ago, Klaus already knew that the historic jewel commanding spectacular vistas of the active harbor had a world class location. His goa! was to match the quality of what diners could view with their eyes with what they could taste from their dining experience ... to combine the best view with the best food. Fresh seafood was to be the key focus. Two years into his quest, ] am excited to say that Klaus has decided co pull ont all the stops and go for broke, sparing no effort. . His Idea: If the currents of the Pacific meet in the waters that wash ashore on the beach at Peppi's, then the menu should also reflect the cuisines of those coastlines of the Pacific’ Rim as well. This meeting and blending isa trilateral affair because it also incorporates into the equation the best of freshly grown and caught products from here in B.C. all tied together with European style, management and quality control. To ensuve that the truly revolutionary changes of the new direction were successful, Klaus put together a joint venture between chefs Lars Trolle Jorgensen and Fritz Handel. 150-25th Street, West Vancouver, B.C. V7V 4H8 Lars had the responsibility of redesigning the menus, improving quality and presentation, and training staff. He brought to Peppi’s new focus a gold medal winning international experience that has made him well known as one of Canada’s leadiny chefs. Locally, his experience spans such fine restaurants as The Cannery, Four Seasons, La Belle Auberge and Executive Chef at the Mandarin Oriental and the William Tell. He took a break from his current duties at Hastings House on Saltspring Island to create new dishes, sauces and incredible taste thrills for Peppi's. The determination to maintain quality control is fantastic. | was lucky to glimpse the "bible" which not only is a page by page description of ingredients, preparation, finish, decoraticn and garnish, it even describes what each dish is to be served on and has a color photo of how it is to appear. This is a style of quality control that you only see ata few fine restaurants. Photos and recipes are fine, but in order to insure that the quality of the new brunch, lunch and dinner menus were maintained, Lars recommended that a professional chef with European training be employed. This would provide the discipline needed to maintain standards and evenness. To fill this spot, Fritz Handel was hired as Executive Chef. Frit2's background includes three years training in Switzerland as well as four star experience ac Hotel Sonne with further international expertence in England and South Africa. In Canada, Fritz has had further four staz experience at the Banff Springs Hotel.
