Summer Potato Salad
cormbines cooked, cooled and
halved local nugget potatoes (in
their skin) with minced red onion,
sliced scallions, chopped peppers,
fresh garlic, and lightly dressed
in your favourite vinaigrette.
Chill overnight; garnish with lors of
fresh minced parsley or herbs,
and serve!

@ Local summer peppers are ablaze
this month in vibranc red, oranges,
yellows. Half or quarter, then broil or
erill until just tender. Pile ona
platter, drizcle with Virgin Olive Oi!

and a splash of Balsamic Vinegar
(both at DUSO’S), and scatter with
tiny Nicoise or Greek olives.
Garnish with clusters of fresh herbs,
and serve cool.
