A big cake for a big nation

Take 512 eggs...

Some birthday cakes are
bigger than others and when
the celebration is for Canada
herself, it is not surprising
that somebody is baking a
whopper of a cake.

people attending the
Folkfest Outdoor Citizenship
Court ceremonies at Robson
Squre in Vancouver will ail
have an opportunity to taste
a slice of cake served by the
Holiday Inn Harbourside.

Standing six feet tall and
measuring eight feet by six

feet, the giant cake will
depict ‘Steps of Con-
federation.’

Ten steps will represent
the Canadian provinces and
each province will have a
cake placed on a step in
order of the province's entry
into Confederation.

weigh 550 pounds.

The giant birthday cake
will be on display on the
food floor of Robson Square
from !1 a.m. onJuly 1.

At approximately 1 p.m.,
following completion of the
Citizenship Court
ceremonies, the cake will be
brought to the outdoor stage
where Frances Fridge, B.C.
Folkfest chairman will cut
the cake with a ceremonial
sword.

the recipe that the Holiday
Inn is using:

CANADA WEEK
SPONGE CAKE

512 eggs
64 Ibs. pre-sifted
cake flour
64 Ibs. sugar
32 oz. powdered
skim milk
3 gallons cold water
64 oz. Cream of Tartare
5'4 oz. vanilla flavour
7 oz. lemon flavour
20 oz. baking powder

1. Mix eggs and sugar
together. Beat until soft
peaks form.
