knows how to put on a par-
ty. The Mai Tai Room had
been reserved, and decorated
with masses of flowers, the
sort of luxurious mixed
bouquets that Churchill lov-
ed to paint. And a
gentleman in a frilly shirt
played gentle piano pieces
from a fess strident era.
Small tables invited one to
sit and visit with friends, and
the: groups dissolved and re-
. formed all during the pleas-
ant hour before the buffet
was presented.
Whai a sight! Great bowls
of salad, loaded with kiwi
fruit; another of lamb curry,

flanked by a colourful
chutney nude of honey,
ginger, raisins. apples, lovely,
stuff (FU give vou the -reptl
pe!) And then the lamp Gone
several ways-ui¢'’ kebabs,
and sticks~of sate. teriyaki
bits and the larger piece
which yielded juicy, wonder-
fully seasoned slices to the
carving knife.

That new ‘‘butterflied”’
leg that I mentioned before
was revealed as more ver-
satile than I had thought. It
can be stuffed and roasted,
yes, but it can also be open-
ed out flat and marinated
and seasoned for the
barbecue or broiler, either ia
the piece or pre-cut into
Strips. The flavour is cx-
cellent in any case.

So for you fucky
barbecuers, here is Mona
Brun’s own recipe for superb
results, using the thawed
butterflied leg opened out.
