44 ~ Sunday, October 30, 1988 —- North Shore News LIFESTYLES Egg cup use not a national debate DEAR MISS MANNERS — Please write about egg cups. l have always eaten soft-boiled eggs thus: Two eggs are brought to the table, one kept warm beneath the large end of an egg cup, the other standing upright in the smaller half (Jonathan Swift has covered the question of whether the little end or the big end of the egg should be topmost). miss manners Judith Martin Tie top of the egg is cut off with a single swipe of the knife, the egg is salted and peppered and eaten from the shell with a teaspoon (or egg spoon) and bits of buttered toast. When one egg has been con- sumed, the shell is removed from the top of the cup and placed on the plate, and the second egg is transferred from the bottom of the cup, placed upright in the top of the cup and eaten. A Canadian friend considers this practice barbarous and points out that, in the Blue Willow china pat- tern, the cup must be resting on the smaller end for the pattern to be right-side up. This proves to her that the ege(s) should be eaten in the larger cup. Since the larger cup is too large to hold an unshelled egg upright, this would mean the ege(s) would have to be opened and scooped into the larger cup in the kitchen and brought to table in the process of getting cold. 1 can- sider that barbarous (and I am a Canadian, too). Who is correct? If Iam, why is the picture up- side down when the eggs arrive at table? Or is my way correct on one side of the Atlantic, and my friend’s way correct on the other? Is there a Canadian Blue Willow and a British Blue Willow? Or is that a moot point because they are all made in Japan nowadays anyhow, and you can’t even approach an egg without chopsticks? GENTLE READER — OK, we're all Canadians here, but some of us like our eggs in the shell, and others prefer them scooped into the cup. Let us not make a na- tional issue of it. However, this does mean a compromise must be negotiated. If the same egg cup is to be used for both styles of eating, one faction is going to have its pattern upside down. Looked at another way, that lucky faction is going to be able to look down at its eggs in the morning and see the pattern cor- rectly from above, while the other faction is going to have to be satisfied with knowing that its egg cups are aiming their patterns for the enjoyment of others.
